The Q signature
Based on an old "Mühlviertler" cooking method, pine fish has been rediscovered at Q Windischgarsten. The freshest salmon trout from the region - directly from the "Pießling Quelle" from the fish dealer Werner Mühle - are used for this.
The salmon trout fillets are gently smoked in a handmade pine box, which gives the fish a delicate pine note. It is served with chive cream potatoes and braised Romanasalt - refined with horseradish and kernel oil.
